This is an excellent alternative to the nasty, acidic, chemical filled, glutinous mess called Coleslaw you get in supermarkets and it fits into the “Eat a Rainbow” way of life we live here at MH.
1/4 red cabbage very finely sliced, but take out the core first.
1 small carrot grated,
2 dried apricots finely sliced, not chopped.
1/4 tsp ground black pepper,
1/2 tsp yellow mustard seeds
1 tablespoon fresh coriander roughly chopped up.
1/4 tsp salt
2 tbsp Mayonnaise Home made is of course best but not vital.
Mix it all together add the mayo last and stir that in.
Finely slice cabbages By cutting it into quarters through the core and cutting through behind the solid white core from the top to the bottom. Then place it cut side down and starting at the pointed end slice down through) 1 small red onion very finely sliced,
Slice onions. To cut it in half first. Sit it on its bottom where the roots are and cut down through to the bottom. Then place it cut side down and finely slice. You are looking for semi-circles for this recipe.
This makes a great stir fry too, without the mayo of course and with a little oil. We always use olive as we grow it ourselves but for a stir fry I put in some shop bought Sunflower oil as well about half and half.
